Gluten is my Kryptonite

As you age, your body, which was once adept at handling any food you ate, may suddenly struggle with your favorite snacks. Some attribute this to U.S. food, but without experiencing food from overseas, I can’t confirm. As an experienced woman, my body indeed signaled these changes to me.

In 2012, I discovered that gluten and I weren’t compatible. There wasn’t a sophisticated test available then, just a doctor connecting my symptoms and advising a gluten-free trial for a couple of months. This adjustment realigned my health. At my follow-up, the doctor presented a choice: continue eating gluten and risk celiac disease, or eliminate it to avoid severe sensitivity. I confidently chose to eliminate gluten. I’d heard alarming stories and aimed to avoid the ER. Back then, finding gluten-free options in restaurants and grocery stores was challenging. My husband would joke about the difficulties of dining out due to my pescatarian and gluten-free diet. Now, it’s fantastic with the variety of options available.

My best friend is now facing gluten issues. Without our discussion about her symptoms, she might have ended up in the ER. Her tolerance is borderline celiac. Her recent diagnosis has left her feeling discouraged, as family meals have become complicated. I have empathized with her and brought her into the world of new recipe ideas. For those embarking on a gluten-free journey, here are recipes and products that have been invaluable to me first starting off in this journey.

My Go-To Products

  1. King Arthur Measure for Measure – great for all those recipes that need flour. Its dairy free and Non-GMO certified. They also have gf recipes online.
  2. Daiya Pizza- Dairy-free, Non-GMO certified, and its not my favorite but it gets the job down for cravings
  3. Krusteaz- They have gluten free box mixes for the quick meal nights
  4. Katz- If you love toaster pastries, doughnuts, or childhood favorite snack cakes. Just thinking about makes my water salivate.
